Whether it was memorable because of the unique opening ceremony, I&#8217;m sure we\u2019ve all seen some TikTok of the Olympic village and Paris\u2019 attempt for a<a href=\"https:\/\/olympics.com\/ioc\/news\/all-you-need-to-know-about-paris-2024-sustainability\" target=\"_blank\" rel=\"noopener\"> more \u2018sustainable\u2019 games<\/a>. One of Paris\u2019 approaches was to half the amount of animal products compared to any other Olympics. Instead of meat, they introduce more plant-based foods.\u00a0 This decision led to a decrease in carbon emissions; however, there were also complaints from some of the athletes.\u00a0 W<\/span><span data-contrast=\"auto\">hat can future Olympic hosts do to cut down these alarming carbon emissions whilst also fueling the athletes with the appropriate nutrients needed? In addition, recent studies show that this practice could reduce costs drastically and also reduce agriculture-related pollution. <a href=\"https:\/\/gfi.org\/science\/the-science-of-cultivated-meat\/\" target=\"_blank\" rel=\"noopener\">By 2030, it is proposed that greenhouse gas emissions can be reduced by up to 92% and land use by up to 90% compared to conventional animal agriculture.<\/a> This developing research must, however, be scalable to venture into a new industry of bioengineered foods. <\/span><\/p>\n<h2>From the lab&#8230;<\/h2>\n<p><span data-ccp-props=\"{&quot;134233117&quot;:false,&quot;134233118&quot;:false,&quot;201341983&quot;:0,&quot;335551550&quot;:1,&quot;335551620&quot;:1,&quot;335559685&quot;:0,&quot;335559737&quot;:0,&quot;335559738&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:279}\"><span class=\"TextRun SCXW10359626 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW10359626 BCX8\">How is it possible to grow meat? <\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">Cultivated meat is grown by culturing animal stem cells <\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">to differentiate, grow and mature into myocytes<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\"> allowing companies to create muscle tissue from just a few cells<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">. This growth is supported by a <\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">scaffold onto which stem cells can attach<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\"> via their integrin matrix<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\"> and proliferate<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">. Scaffolds can take on various forms structurally depending on <\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">its<\/span><span class=\"NormalTextRun SCXW10359626 BCX8\"> biomaterial <\/span><span class=\"NormalTextRun SCXW10359626 BCX8\">and how it has been designed. Image credit (https:\/\/www.sciencedirect.com\/science\/article\/pii\/S2666765722001508#fig0002)<\/figcaption><\/figure>\n<h2>&#8230;to our plate<\/h2>\n<p><span class=\"NormalTextRun SCXW168043008 BCX8\">With total global meat consumption reaching 364 million tons in 2023, the emerging se<\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">ctor of lab grown meats must be scalable to cover even a fraction of the meat market\u2019s capacity.<\/span> <span class=\"NormalTextRun SCXW168043008 BCX8\">Currently, stem cells are transferred to bioreactors to grow on scaffolds and mature into meat tissue. These scaffolds can be made from natural materials like collagen<\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">, fibrin, plant-der<\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">ived <\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">cellulose<\/span><span class=\"NormalTextRun SCXW168043008 BCX8\"> or even fungal mycelium. This ensures that the process of lab grown meats <\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">remains<\/span><span class=\"NormalTextRun SCXW168043008 BCX8\"> ethical and <\/span><span class=\"NormalTextRun SCXW168043008 BCX8\">sustainable. <\/span><\/p>\n<p><span class=\"NormalTextRun SCXW153999025 BCX8\">A bioreactor is <\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">essentially the<\/span><span class=\"NormalTextRun SCXW153999025 BCX8\"> chamber that houses the cell culture serum and scaffold to promote the growth and differentiation of <\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">stem cell<\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">s to <\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">the final product.<\/span><span class=\"NormalTextRun SCXW153999025 BCX8\"> Within this bioreactor, the growth of many of these cells is <\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">dependent<\/span><span class=\"NormalTextRun SCXW153999025 BCX8\"> on the presence of microcarriers and cell aggregates. Mi<\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">crocarriers are support matrixes that <\/span><span class=\"NormalTextRun SCXW153999025 BCX8\">increase cell number. <span class=\"TextRun SCXW51923194 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW51923194 BCX8\">Cell aggregation is a cellular process that allows cells of the same type to bind together. <\/span><span class=\"NormalTextRun SCXW51923194 BCX8\">However, c<\/span><\/span><span class=\"TextRun SCXW51923194 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW51923194 BCX8\">ell aggregates can result in overgrowth while microcarriers <\/span><span class=\"NormalTextRun SCXW51923194 BCX8\">can increase <\/span><span class=\"NormalTextRun SCXW51923194 BCX8\">shear<\/span><span class=\"NormalTextRun SCXW51923194 BCX8\"> stress and damage.
